The 30-year-old has agreed to a two-year deal at the La Liga side, bringing to an end an injury-disrupted three-year spell at Chelsea.
Remy passed a medical in London on Thursday and is due to join the Las Palmas squad in training on Saturday in Gran Canaria.
Former France international Remy spent the 2016-17 campaign on loan at Crystal Palace but managed only eight appearances in all competitions after suffering a major knee injury early in the season.
Chelsea cancelled Remy’s contract last month to free him up to complete a move elsewhere outside of the transfer window.
Remy could make his first appearance for Las Palmas, who also added former Liverpool midfielder Alberto Aquilaini this week, against Malaga on September 11.
